Ingredients

  • 1 pt fresh blueberries
  • 1 tbsp granulated sugar
  • 8 oz crescent dinner rolls
  • 3 tbsp fruit spread
  • 1 extra large egg white
  • 2 tbsp pure cane sugar
  • 1 tsp water

Directions

  1. Heat oven to 400°F. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
  2. In a bowl, combine blueberries with 1 tablespoon granulated sugar until berries are coated; set aside.
  3. Unroll crescent rolls into 8 equal-sized triangles.
  4. On the shortest length of each triangle, place 1 teaspoon fruit spread in center and press 2 tablespoons of blueberry mixture into fruit spread.
  5. Roll dough and fruit up along the length of the triangle.
  6. Whisk together egg white and teaspoon of water. Brush rolls with egg white mixture and sprinkle with cane sugar.
  7. Bake in preheated oven for 12 minutes or until golden brown.

Waffle Ingredients

  • 1⅔ cups milk
  • 3 large eggs, separated
  • 2 cups all-purpose flour
  • 2¼ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup unsalted butter, melted
  • ⅔ cup blueberries

Blueberry Sauce Ingredients

  • 1½ cups blueberries
  • 3 tbsp honey
  • ½ cup orange juice, divided
  • 1 tbsp cornstarch

Directions

  1. Make the waffles: In a medium bowl, whisk together milk and egg yolks. Stir in flour, baking powder, and salt. Stir in melted butter and let stand for about 30 minutes.
  2. Lightly grease and preheat a waffle iron according to the manufacturer's instructions.
  3. Beat egg whites in a glass, metal, or ceramic bowl until stiff. Fold into batter with blueberries.
  4. Working in batches, scoop portions of the batter onto the preheated waffle iron. Cook each waffle until golden brown and the iron stops steaming, 4 to 6 minutes.
  5. Make the sauce: Stir blueberries, ¼ cup orange juice, and honey together in a medium saucepan over medium heat. Bring to a boil.
  6. Mix remaining ¼ cup orange juice and cornstarch together in a small bowl; stir into the blueberry mixture. Cook, stirring constantly, until thickened.
  7. Serve waffles warm with blueberry sauce drizzled on top.
